On the vegetable side of things…I’m pretty sure human happiness was the cucumber’s job.  Aside from a laundry list of sophomoric gestures you can do with a cucumber (it’s ok…we’ve all done it…at least the cool kids have anyway)  there are other beneficial, non-food uses for cucumbers as well.

 

When it comes to eating cucumbers, however, I usually give them the bored-glazed-over look at the grocery store. It’s much more exciting to buy some seasonal greens or exotic root veggies to spice up otherwise boring recipes.

But then I found this little kitchen gadget over the weekend and it has single-handedly repurposed the cucumber in our kitchen.

This contraption (the spiral cutter) is all you need to make beautiful, crunchy, raw spaghetti noodles. Coincidentally, it is also the only thing you need to feel like a ninja…instantly. Really, the possibilities are endless.

*serves 2 people

2 huge cucumbers (that’s what she said, right?…yeah…we get it)

1 Tbsp chili oil

1 Tbsp sesame oil

1 cup cashews (soaked for at least 2 hours)

1 Tbsp soy sauce

1 tsp shoarma seasoning

salt and pepper

Use your awesome spiral cutter to make noodles out of your huge cucumbers. One cucumber is enough for one serving. I know…it does sounds naughty.

Toss the noodles with the oils, salt, pepper, and red pepper flakes. Done!

For the cashew meat, simply mix the cashews with the soy sauce and shoarma seasoning. Done!

    Quite possibly, one of the cutest cats I’ve ever seen! I also love raw zucchini. I bet Zucchini noodles would also work well in this fashion. I need to purchase one of those spiral cutters!
